Vinification

Produced using the traditional Champagne method, grapes are hand-harvested and gently pressed to separate cuvée and taille juices. After fermentation, the wine undergoes secondary fermentation in bottle within historic underground limestone cellars, followed by extended lees aging for complexity and texture, then riddling and disgorgement before final dosage.


Estate Background

Maison Ballarin, founded in 1947, was the first winery to produce traditional-method sparkling wine in Bordeaux. Today, the estate is managed by Céline Lannoye, continuing the legacy of crafting world-class Crémant wines that reflect the unique terroir of Entre-Deux-Mers.
