Animo, Italian for "spirit," is the Michael Mondavi Family's estate vineyard on Atlas Peak, high in the mountains above Napa Valley. Grown in stony, volcanic soils, its Cabernet Sauvignon captures the intensity and structure of mountain fruit, crafted by winemaker Rob Mondavi Jr.
Tasting notes: Deep and concentrated, with dark fruit, a savory mineral edge and hints of spice. Firm, fine-grained tannins give it structure and excellent aging potential.
Pairing: Ribeye, braised short ribs, venison and mushroom dishes. Decant 30–60 minutes and serve at 60–65°F.
